It was a fall evening, I opened a bag of green coffee beans and began sifting through the beans with my fingers. I grabbed a handful and brought them to my nose to sniff them. To my surprise, green coffee beans have no taste or smell, but I wanted to learn as much as I could about coffee. 

For my first batch, I measured the amount of fresh green coffee beans I wanted to roast, poured them into the popcorn popper, and began roasting. At that time, I knew that there’s a lot for me to learn about the roasting process. After a little while of roasting, to much of my surprise, the cover of the popper began to melt into the roasting chamber. It almost set itself on fire! I quickly unplugged the popper, cleaned everything out and started from the beginning, but this time I paid closer attention to the process. 

Before I knew it, coffee beans began to jump in the popper, the chaff began to fly everywhere in the air, the smoke began to rise and to my delight the beautiful aroma of freshly roasted coffee beagan to fill the room.

At this point I was almost in a hypnotic state, the joy that filled my heart was so great I didn’t care about the mess I made. I finished roasting the beans right into the second crack, poured them into a colander and began to shake them. This released the heat and chaff from the coffee. Once it was slightly cooled I took two beans (always two till this day), popped them in my mouth and began to grind them with my teeth. The aroma, body, and acidity of freshly roasted coffee filled my mouth completely. The entire room was filled with delicious smoke, it looked like it was on fire, but I didn’t care, I felt like I was in heaven. 

This ignited my passion for roasting coffee. I knew roasting coffee is something I will enjoy forever. I began to learn more and more about coffee, how to roast it and brew it, my love for coffee began to deepen and it’s with me till this day. My processes remain true to their roots but I began to perfect the roasting process. Your experience with my single origin and blended coffee will sure be a delight. It is always freshly roasted, one batch at a time.
